Experimentin' In The Kitchen

So, last night I knew I had to make something with the ground beef I had in the fridge- but I didn't want to make boring hamburger helper, or tacos. SO. I got creative. I created my own kind of beef enchiladas- just through together what I had, and to be honest, they were SO good. I didn't take any pictures but here's the recipe if you want to try it out. It's really EASY :)

Ingredients:
1 lb ground beef
1 bottle of "light Ragu Tomato & Basil" sauce
1 red pepper- chopped
1 can chopped green chiles (optional)
1 avacado (optional)
Grated cheese
Garlic powder
Chili Powder
Tortillas

Directions:
In a large skillet, brown the ground beef and then add HALF of the tomato sauce, keep some to put on the top of the enchiladas. Sprinkle in some garlic powder, chili powder and whatever other seasonings you want to add and mix in chopped red peppers, and green chiles. Next, set your oven to 350 degrees- and lightly grease a casserole dish. Spoon meat mixture into tortilla, sprinkle with cheese and salsa wrap up and set in caserole dish, do this until your caserole dish is full. Pour the remaining beef/sauce mixture on top , sprinkle with cheese and bake for 20-30 minutes or until hot and bubbly.

After it is cooled, slice some avacado and put on top.
